Bloody Mary Chicken Tinga Tacos

A slow-cooked, spicy chicken perfect for tacos or tostadas.
Ingredients:
1.5 lbs boneless skinless chicken thighs
1.5 cups Red Eye Habanero Mix
½ white onion, sliced
2 garlic cloves
1 tbsp chipotle in adobo
1 tbsp olive oil
Salt to taste
Instructions:
Sear chicken in a pot with olive oil.
Add onion, garlic, chipotle, and Bloody Mary Mix.
Simmer on low for 45 min. Shred chicken and cook 10 min more.
Serve in tortillas with queso fresco, avocado, and lime.
